Ingredients

  1. 2 Tablespoons all-purpose flour
  2. 1 Tablespoon unsweetened cocoa powder
  3. 3 Tablespoons sugar
  4. 1/2 teaspoon ground coffee
  5. 1 Tablespoons mayonnaise
  6. 2 Tablespoons warm water
  7. 1/4 teaspoon vanilla extract 
  8. Pinch of salt
  9. Pinch of baking soda
  10. fresh raspberries, whipped cream or ground nuts as garnish (optional)

Instructions

  1. Mix flour, sugar, cocoa powder, baking soda and salt in a 12-ounce microwave-safe mug. Blend thoroughly with a spoon.
  2. Mix mayonnaise and sugar together in a separate mug or small bowl.
  3. Add ground coffee, water and vanilla extract in mayonnaise and sugar mixture. Mix well.
  4. Pour liquid mixture in cup with dry ingredient and stir and blend with a spoon until smooth. Don’t forget to scrap the side of the mug for a proper blend.
  5. Place mug in the microwave and cook on high for 1 minute and 30 seconds.
  6. Let the cake cool for 1-2 minutes before eating.
  7. Top chocolate mug cake with garnish of your choice.

Tips for that perfect chocolate mug cake

  1. Mix dry and wet ingredients separately before combining for smoother mixture.
  2. Sweetener can be used instead of sugar.
  3. To make egg-free version, replace 1 Tablespoon mayonnaise with 1 Tablespoon vegetable oil + 1 Tablespoon apple sauce.
  4. Avoid overcooking cake. This will make the dessert dry and crumbly. If the cake needs to be cooked further after 1 minute and 30 seconds, continue cooking in the microwave for an additional 15 seconds.
