Ingredients

  1. 2 eggs
  2. 1 teaspoon butter or margarine
  3. 2 button mushrooms (sliced)
  4. 1/2 teaspoon thyme
  5. Pinch of salt
  6. Pinch of black pepper
  7. 1/4 teaspoon hot sauce (optional)
  8. Shredded cheese (optional)
  9. Green onions or fresh herb of choice chopped, as garnish (optional)

Instructions

  1. Grease ramekins with butter or margarine
  2. Add eggs, spices, herbs, hot sauce and mushrooms in ramekin and mix well.
  3. Sprinkle shredded cheese on top
  4. Place ramekin in the oven at 3750 degrees for 20 minutes
  5. Let the cake cool for 5 minutes
  6. Garnish with chopped cilantro
